Jay's Baked Salmon

submitted by Jay

Ingredients

Salmon filet (any size, preferably with the skin still on the bottom)
Lemon (pre-fab lemon juice will do in a pinch)
Dill Oregano
Basil
Cayenne Pepper (Optional - for those that want to add a little “BAM!")

Procedures

1. Squeeze 1/4 to 1/2 lemon on the filet.

2. Apply a generous helping of dill and oregano on top, spreading it to cover most of the filet.

3. Lightly shake basil on top. I’ve found that the best way is to give one good side-to-side shake about 1′ above the filet.

4. Optional: Add cayenne pepper … you probably know how much you like.

5. Bake on middle rack at 375° for 15-20 minutes per inch of thickness. Should be pink and flake easily when done.Remove skin before serving.

Comments

I find that it needs another squeeze or two of lemon after it’s done. (I like a lot of lemon on my seafood!) I usually serve it with steamed asparagus and baby carrots, as well as sourdough rolls.
