2 lbs new potatoes - quartered Procedures 1. Preheat the oven to 400 degrees F. 2. In a glass baking dish, toss the potatoes and garlic with enough olive oil to coat. Toss well. Season with salt and pepper. Roast in the oven 15 minutes or until fork tender. 3. Remove from the oven and cool completely. 4. In a blender, combine the mayonnaise, mustard and lemon juice. Process until smooth. Season with salt and pepper. Add the cilantro and continue to process until incorporated. (Mixture will turn green.) 5. In a mixing bowl, toss the roasted potatoes and garlic, cilantro mayonnaise, sliced eggs, and red onions. Mix well. Season with salt and pepper. Cover with plastic wrap and refrigerate for 2 hours. 6. Remove from the refrigerator and remix. Adjust the seasoning if needed. Servings: 4 to 6 |
