Sweet Potato Salad With Sweet-Sour Bacon Dressing

Ingredients

3 medium sweet potatoes, peeled and cut into 1 inch pieces
Salt and pepper to taste
4-6 slices bacon, diced medium
1 medium red onion, peeled and thinly sliced
1 T minced garlic
1/2 C white vinegar
1/3 C olive oil
1/4 C sugar (I’ve used 1/4 C of light brown sugar here as a substitute for diabetics.)
1/3 C chopped fresh parsley

Procedures

1. Cook sweet potatoes in boiling salt water until fork tender (approx. 8-10 minutes). Drain and cool potatoes.

2. In a large sauté pan over medium heat, cook bacon pieces until beginning to crisp. Remove bacon and drain on paper towels. Reserve 2 T of bacon grease.

3. In reserved bacon grease add the onion slices and cook for two minutes stirring occasionally. Add minced garlic and cook for two minutes. Remove from heat and stir in vinegar, olive oil, sugar, bacon pieces, salt and pepper to taste.

4. Add the mixture to the cooked potatoes. Garnish with the fresh parsley and serve.

Servings: 4

Comments

Can be served warm or at room temperature which makes this a great dish for a potluck. There are no worries about it sitting at room temperature for a couple of hours.
