Ingredients:
2 1/12 C grated raw potatoes (about 3 large) 4 T chopped onion 1 t
salt 2 large eggs 3 T bread crumbs pepper to taste
Procedures:
1. Combine all ingredients in a large bowl.
2. Heat a large, heavy skillet and melt some butter in it. Add an equal
amount of salad oil. (There should be 1/4 inch of melted fat in the
skillet.)
3. Drop batter in by heaping spoonfuls and flatten slightly. Fry until
crisp and brown on both sides.
4. Serve hot with sour cream, applesauce, or ketchup.
