Scalloped Corn

Ingredients

1/2 cup red or green sweet pepper
1/2 cup chopped onion
1/3 cup shredded carrot
1/4 cup water
1 can (16oz) creamed corn
1 can (8 3/4oz) whole kernal corn, drained
1 cup milk
1 cup coarsely crushed saltines
3/4 cup shredded cheddar cheese
2 slightly beaten eggs
1 oz shredded chedder cheese

Directions

Preheat oven to 325.

Grease a square 2 qt baking dish and set aside. In a small sauce pan combine sweet pepper, onion, carrot and water. Bring to a boil, reduce heat. Simmer, covered for 5-7 minutes. Drain well, pressing out excess liquid.

In a large bowl stir together creamed corn, whole kernal corn, saltines, milk the 3/4 cup chese and the eggs. Stir in cooked vegetables and transfer mixture to 2qt baking dish.

Bake uncovered at 325 for 40 to 45 minutes. Or untill center is set. Sprinkel with remaining cheder cheese and let stand for 10 minutes before serving.
