1 1/4 lbs shrimp in shells Directions In mixing bowl combine chili sauce, lemon juice, green onion, horse radish and hot sauce. Cover and refrigerate. Thaw shrimp, if frozen. Peel and devein shrimp. In a large sauce pan bring 3 cups water to boil. Add shrimp, simmer uncovered for 1-3 minutes or till pink. Stir occaisonally. Drain shrimp and rinse under cold water. Chill 4 to 24 hours. To serve arrange chilled shrimp on lettuce leaf lined cocktail cups or glasses. Spoon 1 tablespoon of cocktail sauce over each serving. Garnish with lemon wedges. Serves 6 |
