FETA CHEESE SPINACH DIP

Ingredients

8 oz lite cream cheese
10 oz mild or low salt feta cheese (I’ve also used 8 oz of regular feta )
10 oz chopped frozen spinach thawed and excess water squeezed out
½ c milk
½ c onion chopped
5 garlic cloves, crushed
1 tsp Worcestershire sauce
1 tbls dried thyme
½ tsp salt (1/4 teaspoon if you had to use regular feta)
½ tsp dried ground coriander
1 tbls honey
¼ c Plain bread crumbs

Directions

Put the cheeses into a blender, and mash them down. Add milk. Blend until smooth.

Add the spinach. Blend well. Add the onion and the garlic and blend well. Add the remaining ingredients and blend well. Mixture will be quite smooth.

Pour mixture into a medium saucepan. Bring to a low boil and reduce to a simmer. Simmer (stirring frequently) until it's quite liquid. The mixture will thicken as it cools.

Pour into a bowl, cover and refrigerate three hours or until serving. (Dip can be made one to two days ahead of time.)
