Sausage Balls

Ingredients

3 1/2 cups baking mix (like Bisquick, or your own if you make it)
1 lb sausage (I *love* these with maple-flavored sausage!)
12 oz shredded sharp Cheddar cheese
milk to moisten if needed

Directions

Brown the sausage, making it good and crumbly in little tiny bits. The smaller the better so it will mix well. Drain it on paper towels.

Blend the baking mix with the browned sausage and cheese, add milk if you need to so it will hold together, and mix it well with your hands.

Using a measuring tablespoon (Tbsp) as a guide, make balls from the mixture and set them on an ungreased cookie sheet. (I always line mine with foil, but parchment would work just as well, I'm sure.) I can get around 2 dozen on a sheet without much trouble.

Bake 15 minutes at 350F, or until lightly browned. The bottoms will be darker than the tops, but that's ok.

(My former SIL who gave me this claimed you can get 100 "cocktail size" balls from it, but I get closer to 5 dozen, sometimes a little more if I skimp.)

They freeze very nicely if you let them cool completely and then put them in Ziploc-style bags.
