Pink Coconut Candy

(family recipe)

Ingredients

1 block softened cream cheese
1 box powdered sugar
coconut to taste
1 tsp strawberry extract or other flavoring
red food coloring to taste

Directions

Mix everything together. Drop by spoonfuls onto waxed paper and let sit for four hours or until set.

(Notes: I think "1 box" is about 1lb.? You can also get a box of strawberry-flavored powdered sugar and omit the flavoring. Also, I've had excellent luck using other flavors/colors. Liqueurs like amaretto or Frangelico work well as flavorings, but it will take more liquid to get the flavor, so you might need to add more sugar so that the candies don't come out all gooey.)
