Tasha Tudor's Sugar Cookies

Ingredients

1 lb butter
2 c sugar (or a bit less if you want a slightly less sweet cookie)
2 eggs
1 tsp baking soda dissolved in 3T milk
1 T vanilla
5 c flour

Directions

Cream butter and sugar well, beat in eggs and vanilla. Stir in 2 c of the flour, then the milk-soda mix. Blend in the rest of the flour, roll up in a nice tidy ball, wrap in wax paper, saran wrap or whatever and chill for about an hour.

Roll out thick or thin as you like your cookies..cut and bake at 350 for 10-15 min depending on thickeness. Frost or decorate as you like!

(These are also excellent rolled into rather large balls (almost racket ball size) and then hand-smooshed into a mound on cookie sheet for the thick soft style of cookie. My kids like me to do this even NOT at Yule....then when they are done, the BOTTOM is iced with a heavily vanilla flavored powdered sugar glaze. In Bavaria, the bakeries sold cookies very like this and called them "Amerikaners".)

Can be up to 5 dozen if rather thin and medium sized. I made 2 dozen big (4") round thicker rolled cookies and another 1 1/2 dozen of those large ball-smooshed ones from the batch I just finished.
