Jelly Roll

Ingredients

1/2 cup all purpose flour
1 teaspoon baking powder
4 egg yolks
1/2 teaspoon vanilla
1/3 cup granulated sugar
4 egg whites
1/2 cup granulated sugar
sifted powdered sugar
1/2 cup jelly or jam

Directions

Grease and lightly flour 15x10x1 jelly roll pan. set aside. Stir together flour and baking powder set aside.

In a medium mixing bowl beat together egg yolks and vanilla with an electric mixer. Gradually add the 1/3 cup sugar. Beat on high til sugar is nearly dissolved.

Wash beaters. In another bowl beat egg whites on medium till soft peaks form. . Gradually add the 1/2 cup sugar, beat till stiff peaks form. Fold egg yolk mixture into egg whites. Sprinkle dry mix into egg mix and gently fold untill just combined. Spread batter evenly into prepared pan.

Bake at 375* for 12-15 minutes. Loosen edges immediately and turn out cake onto towel sprinkled with powdered sugar. Roll up starting from the short side. Cool on wire rack. Gently unroll cake and remove towel. Spread cake with Jelly, jam or pudding, cream. Leave 1 inch margin on all sides. Reroll cake.

Serves 10.
