Chicken and Corn Chowder

Ingredients

½ lb bacon chopped
1 medium onion chopped
½ C celery chopped
3 medium carrots chopped
1 medium red bell pepper diced
2 cloves garlic minced
¼ C flour
2 teaspoons salt
1 teaspoon pepper
2 large baking potatoes peeled and chopped
4 C chicken stock
2 C frozen corn
2 C cooked chopped chicken
4 tablespoons margarine
1 C 2% milk
1/8 teaspoon cayenne pepper

Directions

In a large Dutch oven, render bacon and remove to drain on a paper towel. Discard all but 2 tablespoons of grease. To the grease add the onion and saute for 2 minutes. Add the carrots, celery and bell pepper and saute two minutes. Add the garlic and saute 1 minute.

Add flour and cook, stirring, for two minutes. Add salt, pepper and potatoes and cook stirring for two minutes. Add chicken stock, stir and bring to a simmer. Cook 10-15 minutes or until vegetables are tender.

Add corn, chicken, margarine and milk and simmer 5 minutes. Add cooked bacon and cayenne pepper and simmer 5 minutes. Taste and adjust seasoning if needed and serve.

Makes 12-14 cups
