1 cup flour Directions Heat oven to 425F. Mix together 1 cup flour with 1 tsp salt and 1 tsp soda. Using a fork, cut 1/2 cup butter or butter flavored Crisco into the flour until the bits are the size of wheat grains, give or take. You don't have to be perfect about this, just cut it all together until the butter and flour are really well blended. Now, you're going to measure 1/2 cup of water, but you're only going to add just enough water to the flour to form a dough. Use your fork and mix the water a little at a time until it all clings together. Turn the dough out onto a well-floured board. Knead until it's smooth. You don't have to worry about overworking the dough, and add flour as needed to keep things from sticking. Once the dough is smooth, roll it out on the back of a jelly roll pan or on a baking sheet to 1/8" to 1/4" thick (thinner is better). You can cut it into squares, diamonds, rounds, whatever shape you like. Pick off the extra and the misshapen edge pieces. You can reroll that into more crackers. You can sprinkle the tops with a little large grain salt, sesame seeds, etc. if you like. For the recipe above, you want either salt on top or nothing. Bake for about 10 minutes. You need to watch them, for they need to come out of the oven as soon as they're browned and crisp, but not too dark. Cool them completely before putting them into an airtight jar to keep them fresh
