Apple Cider Pork Stew With Sweet Potatoes (Crockpot)

Ingredients

2 lbs Pork (cubed)
3 T Flour
1 t Salt
1 t Marjoram (dried)
1 t Rosemary (dried)
½ t Thyme (dried)
½ t Freshly ground pepper
6 Carrots (sliced)
2 Onions (diced)
1 Large cooking apple (cored and chopped)
2 C Apple cider (or apple juice)
1 T White vinegar
3 medium sweet potatoes, peeled and cubed (optional)*

Directions

Dredge pork in flour and spiced/herbs. Put carrots, onions and apple in crockpot. Top with pork. Combine apple cider and vinegar and pour over meat.

Cover and cook on low for 10-12 hours.

*Optional: Peel and dice three small-medium sweet potatoes. Cook in boiling, salted water until fork tender (about 5-6 minutes). Stir potatoes into stew before serving.
