1 cup coarsely chopped pecans Procedure 1. Heat oven to 325°F with rack in center. Spread nuts on a baking pan. Bake until fragrant, about 7 minutes. Transfer nuts to a bowl; set aside to cool. 2. Grease a 10 inch round deep dish pie plate. In a large bowl, whisk together melted butter, sugar, eggs, almond extract, and flour (batter will be thick). Stir in cranberries and ¾ cup pecans. 3. Sprinkle with pecans and sugar, if desired. Bake until golden and slightly crusty on top and a cake tester inserted into the center comes out clean, 50 to 60 minutes. Transfer to a cooling rack. Once cool, remove from pan. Serve with whipped cream or vanilla ice cream. This is best if eaten within a day. Comments Also makes 12, 3 3/4 by 3/4 inch tartlets. Bake for 35 to 40 mins. I like to eat this with tea or coffee. Its great for breakfast or as a dessert. |
