Polpetes with Yogurt Cucumber Sauce

Ingredients

2 potatoes
dill weed, chopped
3 green onions, sliced
1 egg, beaten
4 oz feta cheese
2 T lemon juice
vegetable oil
flour for dredging

Procedures

1. Boil potatoes and peel before cooling.

2. Mash thoroughly.

3. Add onions, dill, feta, and lemon juice.

4. Add beaten egg and stir thoroughly.

5. Allow to chill for at least 2 hours.

6. Shape into flat patties about 3 in. in diameter.

7. Dredge with flour.

8. Fry in vegetable oil until golden brown on both sides.

9. Serve topped with Yogurt Cucumber sauce.

Servings: 3

Yogurt Cucumber Sauce

Ingredients

4 oz plain yogurt
4 oz half-and-half
mint leaves, to taste
1 cucumber

Procedures

1. Peel and seed cucumber.

2. Chop coarsely.

3. Add yogurt, half-and-half, and mint leaves.

4. Stir thoroughly.
