Lefse (Norwegian Potato Pancakes)

Ingredients

2 lb Mashed Potatoes
1/4 c Butter
1/4 c Milk
1 1/2 tsp Salt
1 tbs Sugar
2 1/2 c Flour

Directions

Add the butter, milk, salt, and sugar to the potatoes and whip until light and fluffy.

Cool the potato mixture and then chill in the refrigerator.

After chilling, add about half of the flour and beat until smooth. Beat in enough of the remaining flour to make a smooth dough

Shape into a ball and turn out onto a lightly floured surface. Roll into a round about 1/8 inch thick

Place a lefse "round" on an un-greased griddle or skillet and cook until lightly browned.

We usually serve them rolled with butter and powdered sugar
