Vamino Bars

Submitted by Mike

Vamino Bars are an old family favorite, to which I make my own alterations. Basically you've got a three layer bar:

Ingredients and Directions

Prep: Line a 9X13 inch pan with waxed paper. Find a hand mixer.

Layer One:

3/4 cup butter or margarine
1 egg
1/4 cup sugar
5 tbsps cocoa (this is real cocoa, not hot chocolate mix)
1 tsp vanilla
2 cups graham cracker crumbs
1/2 cup finely chopped walnuts
1/2 cup shredded coconut

In a saucepan, melt butter and add egg, sugar, cocoa, and vanilla, until mixed to a uniform consistency. Turn off heat, and stir in crumbs, walnuts, and coconut.

Spread warm mixture onto waxed paper, providing an even coating to bottom of pan. Press firmly. Place in refrigerator, and chill well.

Layer 2:

1/2 cup butter or margarine, softened
4 tbsp instant vanilla pudding
6 tbsp milk
4 cups confectioners' sugar (small box, basically)

Combine all layer 2 ingredients with a hand mixer. It should have the consistency of thick frosting. Spread evenly over chilled first layer. Place back in refrigerator.

Layer 3:

5 squares semi-sweet chocolate
5 tbsp butter or margarine

Melt chocolate and butter together in a saucepan, or microwave in a plastic bowl. Stir often, until completely mixed and melted. While mixture is warm but not hot, spoon over layer two and spread gently and evenly (Layer two may melt slightly but will reform later).

Place completed pan back in refrigerator for a couple of hours, or until top layer is hard. Remove from refrigerator and slice into small squares or bars. Finished product is very rich, so cut small!
