Southern-Flavors Smoked Turkey Soup

Note: While this recipe uses turkey, it’s possible to substitute another poultry and retain the general flavor of the soup. The soup gets its character more from the stock that is made from a smoked turkey carcass than from the meat used.

Ingredients

1 tsp olive oil
2 medium-large sweet potatoes, peeled and cubed
2 green bell peppers, chopped
2 medium onions, chopped
4 garlic cloves, minced
2 tsp cumin
2 tsp ground coriander
1 tsp salt (or to taste)
1/2 tsp pepper
Cayenne pepper (to taste)
16 oz Collard greens (chopped, frozen)
5 c Chopped turkey (or chicken)
12 c Smoked turkey (or chicken) stock
1 c Salsa (medium or hot)
12 oz Okra, frozen/chopped

Directions

In a large stockpan over medium high heat, heat olive oil. Saute onion and bell peppers for 2 minutes. Add sweet potatoes and garlic and saute, stirring for 2 minutes. Add seasonings and cook, stirring 1 minute.

Add stock, turkey, salsa and okra. Bring to a boil, reduce heat to a simmer, cover and cook 20 minutes or until potatoes are tender and okra has fallen apart. Adjust seasoning and serve.

Makes 18-20 cups
