2/3 C red onion diced ½ medium poblano pepper diced 2-3 T
grated fresh ginger 1 mango peeled and diced 1 cooking apple,
cored and diced 8-10 oz chunk pineapple (reserve juice) Salt to
taste Pepper to taste
Directions
Combine all ingredients and mix well.
Dressing
2 Limes juiced 1 T honey 2 T reserved pineapple juice
Mix well and pour over fruit. Stir well. Refrigerate two hours before
serving.
