Beet (or Pear) and Bleu Cheese Salad |

Ingredients
1 c halved walnuts (toasted) 3-4 handfuls mixed fancy greens 8 oz
sliced canned beets (or six poached pear halves) 4 oz bleu cheese
crumbled (or aged goat cheese)
Dressing: 2 T olive oil, 1 T walnut or macadamia nut oil 3T vinegar of
choice.
Directions
Arrange the greens, mixed with nuts on the plate, top them with beets or
pears, then crumble cheese over this, and drizzle with dressing.
Serves 6 for a light first course, or 4 hungry folks.
