Middle Eastern Couscous With Dried Fruit and Nuts

Ingredients

1 ½ cup couscous
2 cups water
½ cup raisins
¾ cup reconstituted dried apricots chopped
½ cup dates chopped
¾ cup toasted pine nuts or toasted chopped walnuts
Zest of a lemon
Juice of ½ lemon
¼ cup olive oil
½ teaspoon cinnamon
¼ teaspoon cumin
¼ teaspoon coriander
4 – 6 green onions thinly sliced and including green part
Salt to taste
Cayenne pepper to taste
Black pepper to taste

Directions

Reconstitute apricots by bringing water to a boil and submerging apricots for 10 minutes. Drain water and chop.

In a saucepan, bring water to a boil. Turn off heat. Pour in couscous and cover saucepan and allow to steam for 5 minutes. Fluff couscous with a fork and place in a large bowl.

Add raisins, reconstituted apricots, dates and nuts. Stir well.

In a small bowl, combine lemon juice, lemon zest, olive oil, salt and both peppers and mix well. Pour over couscous. Add green onions. Stir couscous until all ingredients are incorporated well.

Refrigerate. Couscous can be made a day ahead of time and can be served chilled or at room temperature.

6-8 servings. Recipe can be doubled.
