Spiced Rice with Pineapple and Green Onions |

Ingredients
1 1/2 tablespoons olive oil 1 large onion, chopped 2" Ginger,
grated 2 jalepenoes, diced 1/2 tsp turmeric 1/4 tsp cinnamon 1
cup white rice 14 oz chicken broth 2 oz water 1 bay leaf 1/8
tsp cayenne pepper 16 oz Pineapple, chopped 2 scallions, chopped
Directions
Heat oil in large heavy saucepan over medium heat. Add chopped onion
and, ginger, jalepenoes and stir until onion is translucent. Mix in
turmeric and cinnamon. Add rice and stir 2 minutes. Add chicken broth,
water, bay leaf and cayenne pepper. Bring to a boil; reduce heat, cover
and cook until liquid is absorbed, about 20 minutes. Stir in chopped
pineapple and sprinkle green onions on top before serving
