Maybe not what you're looking for. And I have no idea if you can get it on Itunes. But anyone says drums and I think Albannach!!!!! Check it here. They're redic.

I'm really not into psy/trance stuff, but my boyfriend is... as far as that goes, I kind of like Celtic Cross.

A fair bit (not all, but most of the more recent stuff) of Gabrielle Roth's music is on iTunes. I've also liked Dead Can Dance for moving meditation work, and someone turned me onto Delirium's _Poem_ album in particular.

I also like some of the Adiemus CDs: some tracks don't work for dance work, and others are great. (If I were buying it for this, I'd pick the first album (not on iTunes but their live CD, volume 5, has several of their best known tracks, though not my favorite for dance work, which is Tintinabulum off their first CD), or the third volume (Dances of Time).

For anyone not familiar with them, they've done a very interesting thing of picking existing musical forms, and creating new ways of exploring them - more New Age style soundscapes, but similar chord progressions to the original forms. Instead of using an existing language, they use syllables (in pieces with a vocal line, which not all of them have) from a variety of languages, but that don't mean anything strung together.

Almost anything by Brent Lewis!!  Don't know if it's available on iTunes, but don't see why it wouldn't be.  Here's a sample:
