could anyone suggest some good reading about the Egyptian pantheon? and also good books on any Egyptian mythology surrounding them?

Egyptian mythology is actually fairly tricky -- there just isn't a corpus of stories like those the Greeks and Romans left us.  We have a few narratives, many of them primarily in Greek versions, and a lot of vignettes and associations and images to piece together.

Because of this, rather than collections of stories, you're likely to get maximal detail from dictionary-type books like The Ancient Gods Speak: A Guide To Egyptian Religion (Donald B. Redford, editor) or The Dictionary of Ancient Egypt (Ian Shaw and Paul Nicholson).  That can be well-supplemented with reading the more general theological texts like Hornung's or Meeks and Meeks as well as going through any of the books with titles like 'Ancient Egyptian Literature' (I think I have at least three or four of these, mostly the same stories in different translations).
