Mythology books and references!

The Complete Gods and Goddesses of Ancient Egypt, Richard H. Wilkinson
The Ancient Gods Speak: A Guide to Egyptian Religion, Donald B. Redford

Archaeowiki has a lot of academic references for individual gods - look up the god and see what you turn up in the bibliography.  Warning:  this produces huge huge booklists.

I am not sure whether I want to separate out 'religion overviews', as they contain information about the understanding we have of the natures of the gods, but are a semi-different topic?  But for now I will put my standard recs here:

Conceptions of God in Ancient Egypt: The One And the Many, Erik Hornung
Daily Life of the Egyptian Gods, Dmitri Meeks and Christine Favard-Meeks
Egyptian Religion, Siegfried Morenz

FYI, Thoth, the Hermes of Egypt (1922) is out of copyright and available online HERE. Not read it yet, but Per Djehuty draws heavily from that book.

Another Thoth resource I've found useful is Hathor and Thoth: Two Key Figures of the Ancient Egyptian Religion (1973) by CJ Bleeker, but unfortunately still in copyright.
