I stopped eating meat over a month ago, and I noticed that I have gotten much more "sensitive" and astral projecting has become much easier.  Has anyone else had this happen to them?

Yup. When I don't eat meat for long periods of time, I find that meditation and trance work is much easier.

Nope.  I've been a mostly-vegetarian (and for a time a fairly strict vegan) for a couple decades now.  I've noticed no meaningful difference in any of my woo-woo.

Did you by any chance feel/think it might in advance of going vegetarian?  Because that in itself is powerful thing.

Either this, or it does really work different for different people.
Different foods and to metabolize them is not the same for everybody. *shrug*

Personally I do not feel a difference.
I use to go veggie for some longer stretchs of time once and again and my magic/spiritual whatever is just the same.

I think you're right, it probably affects people differently. Some people might notice a change when they abstain from certain foods, and others might not.

some people seem better wired for vegetarianism than others.  Also, some people DO vegetarianism better than others - no meat doesn't equal healthy! Cheesy  (oh, the horror stories I've heard ...)

As long as you're pretty sure you're healthy on it, I'd say your body likes being veggie.  For me, I'd think I was astral projecting - but it would really be dizzy and whackjobbery for lack of iron .....

I did read that changing your diet can affect astral projection, but that is not why I stopped eating meat.  But I really do feel so much better than I did before, I have more energy.

That's why I do it too. My body just feels sluggish and weighed down when I eat meat (especially red meat, which is a staple of my family's diet). My mom feels at her best when she's on a high-fat, low-carb diet; I'm healthiest as an herbivore. I have this theory that it's a survival thing, that if all humans were wired to be at their best on a certain diet, then if that food became unavailable, we'd die off. Nature doesn't tend to put all its eggs in one basket, in my observation, so I've always wondered if that was an adaptation thing.

I've been more psychic, but I've never done astral travel, so I have no idea about that one.

Could be that this specific thing is especially effected by a vegetarian diet.  Which would explain why I never noticed a change myself (little experience with astral projection).
