As far as I'm aware, we don't have a Creation Myth recorded in Celtic Mythology. I came across this article by Sean O'Duinn which proposed the possible existence of a Purusha type myth behind many of the traditions we do know about, as well as some unusual texts in Celtic Christianity:

Yeah Id go for the IE thing, we have lots of anatomical place names here thatd make it relevant today but Id go more for a cow or a woman rather then a man being dismembered. It fits morewith the lit and how significant that animal was from the iron age on. And Id just like to upset the uber animal rights and uber feminist nuts
