went 'splodey.  Has anyone tried microwaving cream cheese before?

Yep, and it will go 'splodey at full power.  Use a very low power setting and only microwave it for a few seconds.

Mine have not pulled away from the edge like that - maybe decrease the cook time.  The last one I did I cut down to two minutes.

Definietely something to try.  The mug I used was a bit larger than a standard coffee mug - it's, maybe, 16 oz?  I started using a regular mug and, like everyone else, ran into the problem of mixing everything in a small area, so I traded up.  I wonder if the larger mug had an impact on the cooking time as well... more surface area and all that.  I also had an unexpected result - an air pocket in the center of the cake about 0.75".

I'll report back my findings when I try this again.  It'll be bit as there's a regular cake in the house so no need to make more...

Is it bigger around, or just taller?

I've been using mugs that are taller than normal mugs, without a problem.  I've been using a fork to mix everything.  Make sure you get the dry stuff mixed together real well first.  Then add the wet stuff.  If I were using eggs I'd probably beat the egg separatly before adding it.

I'm not sure about the air pocket... Undecided

Thanks!  Next time maybe I'll just set it out of the fridge for a few minutes before I start making the cake.

Slightly taller but essentially larger around.  The ingredients were mixed in the proper order with the resulting batter a smooth uniform consistancy.  I'll have to try a different mug and see how that changes the end product.

Ok, folks, I'm happy to report that my second attempt was much more satisfying.  I used a more standard mug size and decreased the cooking time to 2:20.  While the cake was still dense, I believe that to be a hallmark of this recipe, it was more moist than my first attempt.  Pics below:

Mug cake mixed
Mug cake cooked
Mug cake plated

If I didn't say it earlier, it pairs quite well with mint chip ice cream....  Grin

Mug cake plated

Teehee.  I've been making the brownie version, but I don't bother with plating.  I just toss a scoop of ice cream into the mug and grab a spoon.   Grin

I was feeling somewhat virtuous and decided to share Smiley

How do you like the brownie version?

Heh...it looks considerably less appetizing when plated.  I just grab a spoon and dig mine out of the mug.   Cheesy  I'm sure it was yummy though!

How do you like the brownie version?

I like it a lot -- better than the chocolate cake version.  (But I'm kinda weird for a chocoholic -- I don't really like chocolate *cake* unless it's truly decadent.)

I've had to tinker just a bit with the proportions because the batter came out to dry the first time, but I think that was because I didn't do a very good job of leveling the tablespoons of flour and cocoa.  And I had to get the timing worked out for my microwave.

I like to throw in some chocolate chips, and I'm planning to try it with cream cheese after the next grocery store trip.

The biggest problem is that it's way too easy to make.  Grin

My friend treated me to the brownie version of the chocolate mug cake, and it was yummy. She put cream cheese icing on the top, just to spoil me even more  Wink

1) Back in college I worked in a coffee roasting company.  One of the summer drinks we developed was essentially a home-made gourmet mocha milkshake.  One of the ingredienets was actually coffee grounds.  It wasn't enough so that you would notice the actual grounds in the drink but was definitely enough to boost the overall flavor.

So uhh... do you still know that recipe?  Cheesy

Ok, folks, I'm happy to report that my second attempt was much more satisfying.

And my first attempt was rather satisfying!  I didn't have any cocoa powder, or eggs, so I added more flour and also a dash of cinnamon just to see what would happen, and I topped it with powdered sugar when it was done (after about 2:15). What resulted was a sort-of cake: the texture was along the lines of cake, but not as high or as dry, and yet it wasn't the dense texture of a brownie either.

Since I didn't have any eggs in the house, I used my old "water-oil-and-baking-powder" substitute... and I just now realized I forgot to add baking powder. No wonder it didn't rise.  Roll Eyes

Still tasted good though! Next grocery trip I am getting cocoa.

How much baking powder would you use?
