I was at the local Asian grocery the other day, and I'm always intrigued by the beautiful selections of joss paper, sticks, burners, and other such good things.  I want to pick up loads of them and explore them, but I don't know where to begin.  The people who work in the market aren't native speakers of English, and I would feel rude asking, "So, what's this for anyhow?!"  Has anyone explored much into the meanings, symbolism, use, etc, of these beautiful items?

Have you tried Google? I had no idea what you were talking about, so I did a Google search and found lots of pages about it. Here is the Wikipedia entry for joss paper, and it has a section about how it's used. I hope that's what you were looking for.
